Recipe Name Spicy Carrot Soup

Ingredients 1 tbsp of olive oil
1 large chopped onion
675g of carrots sliced
900ml of vegetable stock
1 tsp of ground coriander
1 tsp of ground cumin
1 tsp of chilli powder
Sprigs of fresh corriander 
Preparation 1. Heat the oil in a large saucepan, add the onion and carrots and cook gently for 5 minutes, stirring occasionally. Add the spices and cook gently for a further minute, whilst stirring.

2. Stir in the stock and bring to the boil. Cover and cook gently for 45 minutes or until the carrots are soft and tender.

3. Pop the soup into a blender and puree until smooth. Then season as necessary. Return to a clean pan and reheat. Serve hot with sprigs of corriander as a garnish.
