Ingredients 2 onions
50g butter
50g plain flour
600ml chicken stock
600ml milk
225g mature cheddar cheese
150ml dry cider
Quarter teaspoon grated nutmeg
Salt and pepper

Preparation 1. Chop the onions and cook in the butter for 3-5 minutes until soft. Reduce the heat and stir in the flour.

2. Slowly add first the stock, then the milk, stirring all the time. Bring to the boil and cook for 3-4 minutes.

3. Remove the saucepan from the heat, add the cheddar cheese and stir until all the cheese is melted. Over a low heat, stir in the cider and seasoning. Do not allow the soup to boil.

4. Pour into individual bowls and garnish with grated cheese and croutons.
