Ingredients Some onion
Chopped potatoes (as many as you would like)
Vegetable stock
Nettles, enough to fill a soup pot
A little butter 
Preparation 1. Saute the onions, potatoes and garlic.

2. Add these to a soup pot and also add vegetable stock to fill the pot half way.

3. Bring the stock to a simmer. Once simmering, pack the pot with nettles, chopped up a little if you wish. Simmer until the potatoes are soft.

4. Add a little salt and serve.

You can also liquidise if you wish, to make a smoother consistancy. Also, add milk or cream to create a crème of nettle soup.
